Why Fat Changes Everything

High-fat raw product is the hardest condenser duty in food work

Lower starting moisture, and yet routinely the more demanding cycle. Both things are true and the reason is worth understanding.

Raw meat and organ runs roughly 65–75% moisture — less water per pound than fruit. But fat does not sublime, it conducts heat poorly, and it changes how vapour escapes the matrix. The result is a cycle that resists being rushed even though the water load looks modest.

The failure mode is a machine specified on water load alone that then cannot hold condenser temperature through the back half of a fatty batch. The batch finishes, eventually, and the plan does not.

Where radiant usually wins

Pet treats are often exactly the product a shelf cannot serve.

Whole pieces, irregular shapes, chunks and bone-in product do not present a flat face to a shelf. Conductive heating serves the bottom layer and the rest waits. Radiant HVT reaches the whole load, which is why this category is the clearest case for that architecture rather than a premium upsell.

Why the market pays for freeze-dried in the first place

The whole premise of raw pet nutrition is that processing did not destroy what was in the food.

Freeze drying never takes the product hot and never takes it through a liquid phase, so nutritional profile, palatability and structure survive in a way heat-dried product does not. That is the claim the category is built on, and it depends entirely on the cycle actually being run correctly rather than pushed.
